We are seeking an experienced Retail Manager to lead the operations of our Red Rooster outlet, a leading Australian fast-food chain specialising in roast chicken, fried chicken, and takeaway/delivery services. This role is responsible for overseeing all aspects of the restaurant’s operations, including financial performance, staff management, customer service, and compliance with franchise standards. The successful candidate will demonstrate strong leadership, strategic planning, and a commitment to delivering exceptional customer experiences in a fast-paced environment.

Task & responsibilities

  • Plan, prepare, and manage staff rosters to ensure adequate coverage for front-of-house and kitchen operations, optimising workforce efficiency.
  • Oversee daily operations of the Red Rooster outlet, including front-of-house customer service and kitchen production, ensuring seamless service delivery.
  • Monitor sales performance, manage budgets, and achieve profitability targets by analysing financial reports and implementing cost-control measures.
  • Maintain inventory levels by ordering stock, receiving deliveries, and ensuring proper stock rotation to minimise waste and ensure product freshness.
  • Keep accurate records of stock levels, daily sales, expenses, and financial transactions to support operational and financial reporting.
  • Ensure correct pricing, merchandise displays, and promotional signage align with Red Rooster’s brand standards to enhance customer appeal and drive sales.
  • Oversee point-of-sale operations, EFTPOS systems, and cash handling procedures to ensure accurate and secure financial transactions.
  • Provide excellent customer service and resolve complaints or service issues promptly to maintain high customer satisfaction.
  • Promote and advertise Red Rooster products, including combo deals, daily specials, and loyalty programs (e.g., Red Royalty), to boost sales and customer engagement.
  • Enforce food safety, hygiene, and occupational health and safety procedures to comply with Australian regulations and Red Rooster standards.
  • Conduct regular staff training on food handling, customer service, and workplace safety to ensure high performance and compliance.
  • Recruit, induct, and supervise staff performance, including conducting performance reviews to build a motivated and capable team.
  • Coordinate with suppliers, maintenance providers, and Red Rooster’s franchise/corporate teams to ensure operational efficiency and brand consistency.
  • Manage waste reduction, monitor product expiry dates, and maintain cleanliness across all areas to uphold safety and quality standards.
  • Implement strategies to improve operational efficiency, service delivery, and customer satisfaction, aligning with Red Rooster’s business objectives.
  • Participate in local marketing activities and manage social media promotions to increase brand visibility and attract customers.
  • Ensure all equipment is well-maintained and food storage complies with safety standards to support operational reliability.
  • Prepare end-of-day financial reports and conduct cash register reconciliations to ensure accurate financial reporting.
  • Develop and implement Red Rooster-specific menu strategies to promote signature items (e.g., roast chicken, Rippa Rolls) and limited-time offers, aligning with brand standards.
  • Ensure compliance with Red Rooster franchise standards, including operational guidelines, branding, and quality requirements set by the franchisor.
  • Analyse and optimise delivery and takeaway operations, including partnerships with third-party platforms (e.g., Uber Eats, DoorDash), to enhance efficiency and customer satisfaction.
  • Manage Red Rooster loyalty programs and promotional campaigns to drive customer retention and repeat business.
  • Collaborate with Red Rooster’s corporate marketing team on national or regional campaigns, such as seasonal promotions or new menu launches.
  • Monitor and report on franchise key performance indicators (KPIs), such as customer satisfaction scores, sales targets, and food cost percentages, to the franchise or corporate office.
  • Implement Red Rooster’s sustainability initiatives, such as recycling packaging and reducing food waste, to align with corporate goals.
  • Customise local store offerings based on customer demographics and market trends while adhering to Red Rooster’s brand guidelines.

 


Qualification & experience

  • Diploma or higher in business, hospitality, or a related field (or equivalent experience).
  • Minimum of one year of experience in retail or fast-food management, preferably in a franchise or quick-service restaurant environment.
  • Strong leadership and team management skills, with experience in recruitment, training, and performance evaluation.
  • Proven ability to manage budgets, analyse financial reports, and achieve profitability targets.
  • Knowledge of food safety, hygiene, and occupational health and safety regulations.
  • Excellent customer service and conflict resolution skills.
  • Experience with point-of-sale systems, EFTPOS, and cash handling procedures.
  • Ability to coordinate with suppliers, franchise teams, and third-party delivery platforms.
  • Strong communication and organisational skills, with the ability to multitask in a fast-paced environment.
  • Familiarity with marketing and promotional strategies, including social media management, is an advantage.
  • Understanding Red Rooster’s brand, products, and operational model is highly desirable.
