Our 2-hatted restaurant celebrates excellence across every touchpoint—and wine is no exception. We’re searching for a Head Sommelier to lead our wine program, guiding our guests through a wine journey that is thoughtful, dynamic, and deeply personal.
About the Wine Program
Reflecting the philosophy of The International, our wine list is curated with flexibility and a strong focus on quality. Built to appeal to a wide range of palates, the list balances well-established classics with emerging producers and underrepresented regions and varietals.
Thanks to deep collaboration with winemakers and distributors, the list showcases vintage depth and nuanced variety. Informative feature texts provide a rich, self-guided experience—perfect for solo diners and curious guests—while highlighted selections spotlight South African producers and Australian wines from heritage vines, proudly celebrating the country’s viticultural legacy.
Your Role As Head Sommelier, you’ll have full autonomy over the ongoing curation of our wine list. From shaping our by-the-glass program to creating bespoke feature sections, you’ll be empowered to lead with your palate and vision. Reporting to the Venue Manager and working closely with our Group F&B Director, you'll collaborate to ensure the list evolves with seasonality, guest trends, and the broader identity of The International.
What You'll Be Doing
- Curate and evolve a world-class wine list that reflects quality, creativity, and guest engagement
- Deliver memorable guest experiences through wine storytelling, tableside recommendations, and exceptional service
- Lead and mentor a team of passionate sommeliers and FOH staff, creating a culture of curiosity, expertise, and hospitality
- Oversee cellar management, purchasing, supplier relationships, and stock control
- Collaborate with the kitchen and events teams to design wine pairings and bespoke beverage packages
- Champion wine education and training across the venue
What We’re Looking For
- Extensive sommelier experience in fine dining (hatted or Michelin-starred)
- Passion for both classic and progressive winemaking regions
- Warm, confident communicator with exceptional guest rapport
- Proven leadership and mentoring capabilities
- Strong understanding of cost control, inventory, and supplier negotiation
- WSET Level 3 or equivalent (Diploma a bonus)
