This role requires a dynamic professional with a strong culinary background, capable of overseeing all aspects of kitchen operations while delivering high-quality modern Australian cuisine.

Task & responsibilities
- Oversee the preparation and execution of all dishes listed on the menu, as well as seasonal and special items, ensuring high-quality standards.
- Design and refine menus using fresh, locally sourced ingredients, with a focus on modern Australian cuisine that reflects the relaxed yet premium dining experience Hanna's Kitchen is known for.
- Ensure all food served meets standards of freshness, taste, presentation, and portion consistency, maintaining the restaurant’s reputation for excellence.
- Lead and supervise the kitchen team in daily operations, including food prep, cooking, and plating, to deliver a seamless and efficient service.
- Coordinate with management and front-of-house teams to discuss menu development, guest feedback, and operational improvements.
- Manage inventory, monitor food costs, and ensure accurate stock ordering to maintain budget targets and minimize waste.
- Recruit, train, and mentor kitchen staff to uphold culinary and hygiene standards, fostering a positive and professional kitchen culture.
- Innovate regularly by researching and testing new dishes that complement the restaurant’s identity and customer preferences.
- Enforce compliance with HACCP, food safety, and occupational health and safety (OHS) regulations to ensure a clean, safe, and organized kitchen environment.
- Participate in hiring decisions when expanding the kitchen team or replacing roles, ensuring the right skills and cultural fit.
Qualification & experience
- Proven experience as a Head Chef or similar role for at least 2 years
- Certification in culinary arts or related field such as Cert IV in commercial cookery
- Strong leadership and communication skills
- Ability to work in a fast-paced environment
- Knowledge of food safety and sanitation regulations
- Ability to run stocktaking and place orders for resupply
- Excellent hygiene and OH&S practices
