Full-Time Chef – Hashi Sushi Macquarie

We are seeking a Full-Time Chef with strong experience in Japanese cuisine to join our growing team. You’ll be responsible for preparing high-quality dishes, maintaining kitchen standards, and helping deliver a consistent and authentic sushi experience to our guests.

Task & responsibilities

Prepare and cook a range of Japanese dishes including sushi, sashimi, tempura, and hot dishes

Ensure presentation, taste, and portioning meets our high-quality standards

Maintain cleanliness and organisation in accordance with food safety and hygiene standards

Monitor stock levels, assist with ordering and inventory control

Supervise and mentor junior kitchen staff as required

Collaborate with management on menu development and seasonal specials

Qualification & experience

Certificate III in Commercial Cookery (or equivalent trade qualification) – essential

Strong knife skills and expert knowledge of Japanese culinary techniques

Ability to work under pressure and in a team-oriented environment

Solid understanding of kitchen operations, HACCP, and food safety regulations

Fluent in English; Japanese language skills a plus but not required

Minimum 3 years of experience as a chef, with at least 2 years in Japanese or sushi-focused cuisine

Experience working in high-volume, fast-paced restaurant settings
