BEST COOK and CHEF roles in Brisbane – new business / experienced team / no evening or weekend work!
The Jeroboam Group Pty Ltd are looking for qualified and experienced Cooks and Chefs to join the core team in the Brisbane CBD.
The Venue | Marco Polo
Marco Polo is a new breed of big volume, fast-paced corporate café and catering options landing in Brisbane’s financial district, located in the spectacular newly renovated landmark, The Complex. Located inside The Complex, Marco Polo consists of two cafe kiosks and corporate catering business – we have a strong focus around breakfast, lunch and corporate catering. Our operation hours are Monday - Friday daytime hours only (Marco operating from 6:30 am – 3 PM, and Polo operating from 6:30 am – 1:30 pm) , so no weekend or night work is required!
Who are you?
We are seeking a switched-on, passionate and experienced chef to join our busy kitchen. Some of the key things we’re looking for include reliability, positivity, an ability to self-motivate and keep others motivated, and a love for the industry.
What do we need from you?
Cook:
- examining foodstuffs to ensure quality
- regulating temperatures of ovens, grills and other cooking equipment
- preparing and cooking food
- seasoning food during cooking
- portioning food, placing it on plates, and adding gravies, sauces and garnishes
- storing food in temperature controlled facilities
- preparing food to meet special dietary requirements
- may plan menus and estimate food requirements
- may train other kitchen staff and apprentices
Chef:
- Planning menus, estimating food and labour costs, and ordering food supplies
- Monitoring quality of dishes at all stages of preparation and presentation
- Discuss food preparation issues with the head chef, managers, kitchen and wait staff (inc cooks / other kitchen staff)
- Maintain a high standard of cooking and presentation at all times
- Keep a sanitised and orderly environment in the kitchen by following WH&S guidelines at all times
- Ensure all food and other items are stored correctly at appropriate temperatures
- Demonstrating techniques and advise on cooking procedures
- Supervise cooks and apprentices and train staff as required
- Check quality of ingredients before using
- Rotate stock as per established procedures
- Monitor stock levels
Other requirements include:
- Cook: relevant AQF Cert IV (or equivalent or higher) AND at least 1-year relevant high level work experience
- Cook: relevant Diploma (or equivalent or higher) AND at least 1-year relevant high level work experience
- Current HACCP and relevant Food Safety accreditation.
- High cooking standards with attention to detail
- High level of interpersonal, communication, and teamwork skills
- Good work ethic including the ability to work under pressure
- Excellent time management
- Ability to maintain service standards
- Strong ability to work autonomously amongst a fast-paced environment
- Good knife skills with quick, consistent prep and service
What We Offer:
- Daytime Monday - Friday role - no weekends or evenings!
- Excellent renumeration from $74,000 to $80,000 p.a. plus superannuation (dependant on skills, experience and qualification)
