We are seeking a skilled and enthusiastic Cook with experience in Mediterranean, Turkish, or Middle Eastern cuisine. You will be an integral part of a fast-paced kitchen that focuses on open-flame charcoal grilling, fresh local produce, and authentic, made-to-order dishes like Adana kebab, cevapi, whole grilled snapper, falafel platters, and house-made dips.
Key Responsibilities:
- Prepare and cook a wide range of grilled dishes, skewers, seafood, and vegetarian platters using traditional charcoal grilling and roasting techniques
- Season and marinate meats such as lamb, chicken, and fish following Turkish and Mediterranean recipes
- Assist with preparation of dips, sauces, and sides such as cacik, tabouli, sarma, and mixed pickles
- Ensure consistent presentation and portioning of menu items such as Adana kebab, lamb skewers, grilled salmon, and mezze plates
- Maintain cleanliness and hygiene in food preparation and service areas, following food safety standards
- Monitor inventory and assist with stock control and ordering
- Support senior kitchen staff in training and mentoring junior cooks and kitchen hands
- Participate in menu development and quality improvement initiatives
You Will Bring:
- Minimum 2 years of hands-on experience in a commercial kitchen, ideally in Mediterranean/Turkish cuisine
- Proven experience with charcoal grilling and traditional meat preparation
- Solid understanding of kitchen operations and food hygiene standards
- Ability to work efficiently under pressure and deliver during peak service times
- Team-focused attitude with excellent communication skills
- Flexibility to work nights, weekends, and public holidays
- Relevant qualifications in commercial cookery (preferred)
