We are seeking a skilled and enthusiastic Cook with experience in Mediterranean, Turkish, or Middle Eastern cuisine. You will be an integral part of a fast-paced kitchen that focuses on open-flame charcoal grilling, fresh local produce, and authentic, made-to-order dishes like Adana kebab, cevapi, whole grilled snapper, falafel platters, and house-made dips.

Key Responsibilities:

  1. Prepare and cook a wide range of grilled dishes, skewers, seafood, and vegetarian platters using traditional charcoal grilling and roasting techniques
  2. Season and marinate meats such as lamb, chicken, and fish following Turkish and Mediterranean recipes
  3. Assist with preparation of dips, sauces, and sides such as cacik, tabouli, sarma, and mixed pickles
  4. Ensure consistent presentation and portioning of menu items such as Adana kebab, lamb skewers, grilled salmon, and mezze plates
  5. Maintain cleanliness and hygiene in food preparation and service areas, following food safety standards
  6. Monitor inventory and assist with stock control and ordering
  7. Support senior kitchen staff in training and mentoring junior cooks and kitchen hands
  8. Participate in menu development and quality improvement initiatives

You Will Bring:

  1. Minimum 2 years of hands-on experience in a commercial kitchen, ideally in Mediterranean/Turkish cuisine
  2. Proven experience with charcoal grilling and traditional meat preparation
  3. Solid understanding of kitchen operations and food hygiene standards
  4. Ability to work efficiently under pressure and deliver during peak service times
  5. Team-focused attitude with excellent communication skills
  6. Flexibility to work nights, weekends, and public holidays
  7. Relevant qualifications in commercial cookery (preferred)
