Task & responsibilities

As a Chef de Partie at Cooly Surf Club, you will be responsible (but not limited to) the following tasks

  • Planning and developing menus in collaboration with the Head Chef and management, considering seasonal produce, customer preferences, and club standards
  • Estimating food and labour costs, and maintaining cost-effective stock control by ordering and managing food supplies
  • Monitoring the quality, consistency, and presentation of all dishes throughout preparation and service to maintain the Club’s culinary reputation
  • Communicating effectively with management, kitchen, and front-of-house staff to ensure smooth kitchen operations and customer satisfaction
  • Demonstrating advanced cooking techniques and advising junior staff on preparation procedures and plating standards
  • Preparing, cooking, and presenting a wide range of meals to meet the Club’s high-volume service demands
  • Enforcing hygiene, health, and safety standards in accordance with food safety regulations and Club policies
  • Assisting with the selection, training, and supervision of kitchen staff where required
  • Managing food preservation techniques including freezing and appropriate storage to minimise waste and maintain stock quality

This role requires a hands-on, proactive Chef with strong attention to detail, leadership capability, and the ability to thrive in a busy kitchen environment.


Qualification & experience

  • Certificate IV in Commercial Cookery or equivalent (required) and a Diploma of Hospitality Management or equivalent (required)
  • Proven experience working as a Chef in a high-volume kitchen environment (minimum 1 year)
  • Strong knowledge of food safety regulations, hygiene practices, and kitchen operations
  • Ability to plan menus, manage food costs, and order supplies efficiently
  • Experience supervising or training junior kitchen staff (desirable)
  • Excellent time management, communication, and organisational skills
  • Flexibility to work across a rotating roster, including weekends and public holidays
  • Passion for quality food, teamwork, and delivering exceptional dining experiences
