CHEF – FULL TIME
Collective Bar and Grill Restaurant – Bexley, NSW
Salary: $75,000 – 80,000 per annum + superannuation
Position: Full-Time (38 hours per week)
Collective Bar and Grill Restaurant, located in the heart of Bexley, NSW, is a family-owned establishment specialising in traditional Eastern European Balkan cuisine, with a strong focus on authentic Macedonian dishes. We are seeking an experienced and passionate Chef who is skilled in preparing and presenting traditional Balkan-style meals, using time-honoured recipes and cooking methods.
Key Responsibilities (in line with ANZSCO 351311 – Chef):
- Plan and organise the preparation and cooking of food in accordance with Balkan culinary traditions, especially Macedonian dishes such as salads, grilled meats, and baked goods.
- Examine food to ensure quality, freshness, and portion control.
- Monitor and manage food preparation to ensure standards of hygiene and safety are met.
- Supervise kitchen staff and provide training on traditional cooking methods, food presentation, and efficient kitchen operations.
- Plan menus in consultation with management, considering dietary and cultural preferences.
- Estimate food and labour costs and order supplies accordingly.
- Oversee stock control and ensure efficient usage of ingredients in line with menu demand.
- Ensure all dishes meet the visual and taste expectations of the restaurant's high standards.

Qualification & experience
Skills and Experience Required:
- Minimum AQF diploma in the field with 1 year experience or atleast 3 years full-time experience as a Chef in a commercial kitchen, preferably in a Balkan or Eastern European restaurant.
- Proven knowledge of and hands-on experience with traditional Macedonian cuisine and cooking techniques.
- Relevant certification in commercial cookery or equivalent (highly regarded).
- Ability to work in a fast-paced environment while maintaining high-quality standards.
- Strong leadership and team coordination skills.
