Salary: $76,000 – $80,000 + superannuation
Task & responsibilities
- Lead laboratory-based testing and quality analysis of brewing raw materials, in-process beer, and finished beer products using advanced brewing instrumentation (e.g. pH meters, densitometers, ATP meters, alcohol meters, microscopes, dissolved oxygen meters).
- Develop, trial, and optimise new beer recipes and brewing formulations based on scientific research, brewing market trends, and consumer sensory feedback.
- Conduct sensory evaluation and blind tastings at all brewing production stages to monitor beer flavour consistency and product quality.
- Oversee and validate brewery Clean-in-Place (CIP) sanitation protocols and maintain strict hygiene records for audit and compliance.
- Perform microbiological analysis, shelf-life testing, and stability trials to assess safety, colloidal stability, and shelf life of packaged beer.
- Collaborate with ingredient suppliers to verify brewing material specifications and support the selection of new ingredients for beer R&D.
- Develop and maintain Standard Operating Procedures (SOPs) for all brewing laboratory processes, product quality verification, and regulatory compliance.
- Contribute to brewery HACCP planning, implementation, and continuous improvement.
- Provide technical training to brewery production staff on laboratory procedures, recipe trials, and quality control standards specific to beer brewing.
Secondary Responsibilities
- Assist in the planning and scheduling of brewery production with a focus on integrating new beer formulations and supporting product development and innovation from a food science perspective.
- Monitor and analyse key quality control parameters across brewing and packaging processes to ensure compliance with food safety standards and product specifications.
- Oversee technical aspects of day-to-day brewery operations by ensuring brewing processes meet required quality, hygiene, and regulatory standards.
- Maintain a strong presence on the production floor to observe, evaluate, and contribute to continuous improvements in product quality and process efficiency.
- Provide support across different brewery functions when not engaged in product development or quality assurance tasks, applying food technology principles where relevant.
- Represent the brewery at industry seminars and trade events, contributing expertise on brewing innovation and advancements in beer quality.
Qualification & experience
- Bachelor’s degree in Food Science, Brewing Science, Chemistry, Microbiology, or related discipline or at least 5 years’ equivalent experience in technical beer brewing preferably experience in a laboratory-based role within a brewery, with demonstrated expertise in scientific analysis, brewing process control, and regulatory compliance.
- Strong understanding of beer brewing science, laboratory instrumentation, sensory profiling, and food safety systems.
- High attention to detail, strong documentation and analytical skills.
- Passion for brewing innovation and continuous quality improvement.
