We are seeking a skilled Sparkling Winemaker (Sparkling Wine Production) to support the production of premium Traditional Method sparkling wines. This hands-on role involves all aspects of winemaking, including cellar operations, laboratory analysis, production planning, and customer collaboration. You will play a key role in delivering high-quality wines across a diverse portfolio, ensuring best practice processes and contributing to continuous improvement initiatives.

Task & responsibilities
Assisting and where required in managing winery laboratory analytical testing for all operational requirements for all onsite grape Receival, fermentation management, wine storage, bottling and packaging.
- Analytical testing of grape samples to assess ripeness, quality and Harvest timing.
- Analytical Testing of wine (alcohol, sugar, nutritional content)
- Provide direction for any laboratory analytical requirements.
- Preparations of tastings for internal and external stakeholders.
- Sensory analysis of grape (colour, flavour) and wine samples to ensure soundness and acescents of any wine faults
Working as a key specialist member of the winemaking team with direct decision-making responsibilities for coordinating cellar operations including but not limited to:
- Operational note creation, action and updating
- Providing direction to cellar, Laboratory and production line operators
- Provide direction for fruit and juice intake management.
- Fermentation management, additions, temperature control.
- Bulk wine and Tirage Maturation (storage) management to ensure sound quality packaging requirements are met.
- Assist in the running of Tirage/Riddling/Disgorging and packaging equipment as required
- Undertake blending of wines adhering to any legal (Wine Australia), Food quality and Safety (FSANZ) wine style and client requirements.
- Prepare wines for bottling, including preservative additions, clarification, filtration, organising transportation, approving packaging
Contribute to an efficient, effective and best practice/continuous improvement approach to all production activities, including involvement of trials and R&D projects.
- Ensure palate development through sourcing and tasting external parties wines regularly
- Advise on new industry research
- Oversee any requested customer trials, including data collection analysis and reporting
- Oversee any internal future focused research and experiments to ensure best in glass practices, continual improvement focus and upmost safety culture within the business.
- Ensure a quality and safety focused mindset at all times
Qualification & experience
- Tertiary qualification in winemaking or related science
- Minimum 2–3 years’ experience in winemaking
- Experience in Traditional Method sparkling wine production
- Strong knowledge of cellar operations and wine analysis
- Experience with tirage and disgorging equipment
- Understanding of red and white table wine production
- Strong attention to detail and problem-solving skills
- Ability to work both autonomously and within a team
