Our Bondi Junction retail store is currently seeking an experienced and passionate Senior Butcher to join our team.

About the Role

As a Senior Butcher, you will be responsible for expertly cutting and preparing premium meat products while maintaining Vic’s renowned quality, presentation and customer service standards.

This is a hands-on senior technical role requiring advanced butchery expertise, day-to-day guidance, participation in stock control and ordering activities, plus strong butchery oversight within a premium retail environment. Working alongside the retail butchery team daily, the Senior Butcher will contribute directly to meat preparation, customer service and merchandising, while assisting colleagues with tasks to support smooth day-to-day retail butchery operations.

Key Responsibilities

• Accurately break, cut, trim, portion and prepare premium meat products in line with daily worksheets and Vic’s standards.

• Work hands-on within the retail butchery department alongside team members to support production requirements and customer orders.

• Maintain consistency and quality across all cuts to meet premium customer expectations and retail standards.

• Guide and mentor two butchers within the Bondi retail team, assisting colleagues with tasks and job sheets to foster a cooperative and efficient team environment.

• Coordinate daily butchery tasks and support efficient workflow within the department.

• Assist with training, mentoring and maintaining butchery and food safety standards across the team.

• Assess daily ordering requirements while participating in stock control and inventory monitoring activities.

• Regularly check stock levels, monitor product rotation and manage stock movement to minimise carry forwards and reduce wastage.

• Assist with stock coordination requirements and wider operational needs.

• Provide exceptional customer service and premium product knowledge within a retail environment.

• Assist customers with specialised orders, cooking advice and product recommendations.

• Maintain high merchandising and retail display standards throughout the department.

• Monitor and ensure all products meet Vic’s Meat standards relating to quality, consistency, food safety and presentation.

• Adhere to the Company’s HACCP, Work Health and Safety (WH&S), and Quality Assurance guidelines at all times.

• Report workplace incidents and operational concerns to management as required.

About You

• Certificate III in Meat Processing or equivalent qualification.

• Minimum 3 years’ experience in a retail butchery role.

• Experience working within premium retail butchery or fast-paced butcher shop environments preferred.

• Previous experience in a Senior Butcher or similar role within retail butchery preferred.

• Strong knife skills and advanced product knowledge.

• Experience with ordering, stock control and inventory management within a retail butchery environment.

• Passion for premium products and customer service.

• Strong communication and organisational skills.

• Ability to work efficiently within a fast-paced retail environment.

• Ability to mentor junior staff while maintaining butchery, quality and food safety standards independently.
