Role Overview

We are seeking a skilled and passionate Pastry Cook to join our team, with deep expertise in traditional Indonesian kue basah and the ability to produce a variety of additional artisanal sweet treats. The successful candidate will contribute to both our high tea and dessert menu, preparing a daily rotation of at least 10 freshly made items, each crafted using time-honoured methods and specialist tools.

This role is strictly artisanal in nature, focused on small-batch preparation for on-site service. It does not involve mass production or standardised factory-style output.

Task & responsibilities

  • Prepare, steam, mold, wrap, and plate a wide variety of traditional Indonesian desserts, including but not limited to kue lapis, putri mandi, kue sus, kue koci, and putri ayu
  • Produce additional sweet items inspired by global dessert traditions, suitable for high tea or à la carte service, maintaining high standards of taste, texture, and presentation
  • Craft traditional fillings such as palm sugar coconut by hand, using authentic recipes and techniques
  • Use traditional tools and presentation methods, including banana leaves and custom molds, to uphold cultural authenticity
  • Ensure strict compliance with food safety, hygiene, and quality control standards
  • Contribute ideas for new, seasonal, or event-specific desserts aligned with cultural and customer preferences
  • Work efficiently to meet high-volume, same-day service production targets without compromising quality

 


Qualification & experience

Applicants must meet one of the following qualification pathways:

  • AQF Certificate III in Commercial Cookery (with at least two years of on-the-job training); or
  • Certificate IV in Patisserie or Commercial Cookery plus one year of full-time experience; or
  • At least three years of full-time experience in a commercial kitchen (no formal qualification required)

 

Preferred Attributes:

  • Proven experience in preparing Indonesian and/or Southeast Asian desserts
  • Skilled in glutinous rice-based preparations, steaming, dough shaping, and banana leaf techniques
  • Demonstrated ability to prepare a diverse range of pastries beyond traditional Indonesian sweets
  • Ability to work independently and meet high-volume production timelines
  • Prior experience in a bakery, hotel, or fine-dining environment preferred
  • Understanding of halal principles and strict adherence to food safety regulations
