Located on Hobart’s iconic Victoria Dock, our premium à la carte venues showcase Tasmania’s world-class produce at its best, offering a truly elevated seafood dining experience.

Led by internationally experienced Executive Chef Stefan Schroder, our kitchens are positive, inclusive, and driven by a shared commitment to excellence.

We are seeking a Head Chef who leads from the front, takes ownership, and drives performance, someone who anticipates challenges, solves problems early, and consistently lifts the standards of the entire kitchen.

Working alongside the Executive Chef, you will take full responsibility for your kitchen, its people, performance, systems, and results.

What we are looking for:

  • A genuine sense of ownership across all areas of kitchen operations, our culture, standards and delivering results.
  • A strong leader with the ability to inspire, mentor, and hold their team accountable.
  • Proven success in high-quality a la carte dining, with at least 3 years’ experience at Sous level or above.
  • A positive solutions focused mindset with the confidence to make decisions and direct their team

The key responsibilities include but are not limited to:

  • Positively leading the team to create a supportive and high-performing environment with daily mentoring and hands-on guidance.
  • Upholding exceptional standards of quality, consistency, and service execution through setting clear standards and expectations.
  • Troubleshooting operational challenges or areas of concern as needed, to ensure a smooth service and maintained kitchen performance.
  • Collaborating with the Executive Chef on seasonal menu ideas, weekly specials, and bespoke seafood dining experiences, sharing fresh and innovative ideas and concepts.
  • Managing accurate ordering, stock management and inventory control.
  • Working with the Executive Chef to drive performance and ensure all budgetary requirements are met, including COGS and labour spend.
