Task & responsibilities
- Plan and design menus that showcase authentic cuisine while meeting customer preferences.
- Estimate food and labour costs, manage budgets, and order food supplies effectively.
- Monitor the quality of dishes at all stages of preparation, cooking, and presentation.
- Discuss food preparation methods and issues with managers, dietitians, and front-of-house staff to ensure seamless service.
- Demonstrate techniques and provide guidance on cooking procedures to junior staff.
- Prepare and cook a wide range of dishes to a consistently high standard.
- Enforce food safety and hygiene regulations within the kitchen.
- Select, train, and mentor new kitchen staff to build a strong and capable team.
- Preserve food items appropriately, including freezing and storing for later use.
Qualification & experience
- Certificate IV in Commercial Cookery or equivalent qualification required.
- 2–3 years of proven experience in a similar role.
- Strong leadership, communication, and organisational skills.
- Ability to work in a fast-paced kitchen while maintaining attention to detail.
