The Role
We are seeking an exceptional Executive Chef to oversee and lead our hospitality operations across our Tasmanian venues. From our Bird in Hand Kiosk, Tasting Room and Restaurant and Joy Experience, our fine-dining restaurant, to Weddings and Bespoke Events at the Royal Tasmanian Botanical Gardens. With no two days the same you will also oversea the operations of the bespoke Weddings and Events offered at Waterton Hall in the West Tamar Valley and Seymour on the East Coast.
As Executive Chef, you will be instrumental in developing strategy, driving operational excellence, and cultivating a kitchen culture built on passion, professionalism, and respect. Your day-to-day work base will be Hobart, with occasional travel to our other sites including interstate as required.
Key Responsibilities
Develop and implement strategies for efficient and profitable operations across all Tasmanian venues
Innovate seasonal menus that showcase premium Tasmanian produce and align with the Bird in Hand brand
Ensure the consistent delivery of exceptional dining experiences, parallel to our acclaimed LVN Restaurant in Woodside, SA
Lead and motivate kitchen teams to foster a healthy, high-performing work environment
Manage kitchen operations, including ordering, stock control, staffing, and scheduling
Set and uphold kitchen policies, procedures, and food safety compliance
Oversee recruitment, training, and performance management of kitchen staff
Collaborate with senior leadership on budgeting, financial planning, and marketing initiatives
Represent Bird in Hand at media events, promotional activities, and brand activations
Plan and lead pre-shift briefings, presentation standards, and event execution
Continuously seek ways to elevate customer satisfaction and drive business growth
About You
You are a passionate and strategic leader who understands that exceptional dining is about more than food—it's about storytelling, culture, and connection. You’re inspired by Tasmania’s rich culinary landscape and capable of bringing it to life in both intimate and large-scale settings.
Requirements
Minimum Certificate 3 in Commercial Cookery
Food Safety Supervisors Certificate required
Minimum 3 years’ experience as an Executive Chef in similar environment
Proven ability to manage multi-site kitchen operations
Strong administrative skills (MS Office proficiency)
Excellent time management and team coordination
Deep understanding of food safety and hygiene standards
Experience in fine dining, events, and contemporary Australian cuisine
