Task & responsibilities

  • Responsible in the preparation of all foods as indicated in the menu, as well as off-menu food items
  • Constructing menus with new or existing culinary creations ensuring the variety and quality of the servings
  • Ensure that the highest level of freshness, innovation, courtesy and presentation of food and kitchen staff are provided to FOUR IN HAND'S guests at all times
  • Controlling and directing the food preparation process and any other relative activities 
  • Discussing food preparation issues with managers, kitchen and waiting staff
  • Costing of menu items & stock taking and ordering 
  • Training staff to prepare and cook all the menu items
  • Constantly research, conceive and develop new food items and train staff in producing these items
  • Knowledge about HACCP and OHS Compliance & maintain correct food safety procedures
  • To clean the work area and maintain a hygienic kitchen free from contamination at all times 
  • Hiring skilled kitchen staff when needed

Qualification & experience

  • Proven experience as a Head Chef or similar role for at least 1 year
  • Certification IV in Kitchen Management or related discipline
  • Strong leadership and communication skills
  • Ability to work in a fast-paced environment 
  • Knowledge of food safety and sanitation regulations 
  • Ability to run stocktaking and place orders for resupply 
  • Excellent hygiene and OH&S practices 
  • Time management
