Task & responsibilities

  • Menu planning: creating menus that align with the concept and goals of the restaurant. Design dishes, consider seasonal ingredients, and ensure a variety of options to cater to different preferences.
  • Food preparation: oversee the preparation and cooking of food.
  • Ingredient selection: selecting and sourcing high-quality ingredients. Establish relationships with suppliers, assess ingredient quality, and ensure freshness and consistency in the food served.
  • Kitchen management: manage the kitchen operations, including organising work schedules, supervising kitchen staff, and ensuring efficient workflow. Maintain a clean and safe working environment, enforce hygiene standards, and monitor inventory levels.
  • Staff training and supervision: provide guidance and training to the culinary team. Teach cooking techniques, share recipes, and ensure that the staff follow proper food handling and safety procedures.
  • Plate presentation: focus on the visual appeal of the dishes created. Carefully arrange food on plates, paying attention to aesthetics, portion sizes, and garnishing.
  • Quality control: monitor the quality of food throughout the cooking process. Taste and adjust seasoning, inspect the presentation of dishes, and ensure that the final product meets the restaurant's standards.
  • Menu innovation: regularly updating and innovating the menu. Experiment with new recipes, incorporate culinary trends, and introduce seasonal specials to keep the menu fresh and exciting.
  • Budgeting and cost control: work within budgetary constraints. Manage food costs by controlling portion sizes, minimising waste, and finding cost-effective ingredient alternatives without compromising quality.

Qualification & experience

  • Minimum Diploma level qualification, or 3 years full time work experience.
  • Significant experience required in busy kitchen environment of a mid-to-high end venue.
