We are searching for a cook to join our busy team and assist our Head Chef with the smooth running of preparation and service.  The role will require a dedication to upholding Hygiene, Food Safety and WH&S Standards whilst preparing quality food to specification of the Head Chef.

Key responsibilities will include:

  • Preparation, production, stock control, wastage, portion control, presentation, and WH&S for charcuterie section
  • Being involved in the training, mentoring and development of junior kitchen staff 
  • Produce receival: checking produce on delivery and ensure invoices are correct 
  • Ordering and monitoring stock levels
  • Responsible for charcuterie program including maintaining levels and preparation of all Sausages, Terrines, Salami, large format products and sauces
  • Maintaining food safety practices to specifications of Head Chef 
  • Preparion and presentation of dishes according to the menu 
  • Ensuring presentation and portion control at all times are to the specifications of Head Chef 
  • Managing and monitoring the fridges and food storage to ensure quality and temperature requirements are met.

Cooking & kitchen 

  • Maintain a high standard of operational hygiene and to fully comply with food hygiene regulations and HACCP plan
  • Produce receival: checking produce on delivery and ensure invoices are correct 
  • Control daily food production and delivery of all kitchen products in accordance to the set standards
  • Ordering and monitoring stock levels
  • Ensure delegated tasks are completed from designated checklists and weekly work 

schedules at the end of every shift

  • Responsible for charcuterie program including maintaining levels and preparation of all Sausages, Terrines, Salami, large format products and sauces
  • Maintaining food safety practices to specifications of Head Chef 
  • Preparion and presentation of meats and vegetables according to the menu
  • Baking breads and desserts on pastry section 
  • Recording and monitoring productivity and wastage daily
  • Write preparation lists
  • Place orders daily 
  • Ensuring presentation and portion control at all times are to the specifications of Head Chef 
  • Managing and monitoring the fridges to ensure quality and temperature requirements are met
  • Being involved in the training, mentoring and development of junior kitchen staff.
