Task & responsibilities
- Menu & Recipe Development: Plan and design authentic satay-inspired dishes, ensuring consistency and innovation in flavours.
- Food Preparation: Prepare, season, and cook a variety of satay-based dishes, accompaniments, and wholesale food products to high standards.
- Quality Control: Monitor food presentation, taste, and portion sizes, maintaining compliance with food safety and hygiene standards.
- Stock & Inventory Management: Oversee ordering, receiving, and storage of ingredients, ensuring cost-effective use of resources.
- Supervision & Training: Lead and mentor kitchen staff, allocating duties and ensuring adherence to recipes, safety, and efficiency.
- Kitchen Operations: Organise workflow, manage equipment use and cleanliness, and implement efficient kitchen systems to meet production demands.
- Compliance: Ensure all kitchen activities comply with HACCP, food safety, and workplace health and safety requirements.
Qualification & experience
Qualifications:
- Certificate III or IV in Commercial Cookery (or equivalent) is essential.
- Formal training in food safety and hygiene standards (HACCP preferred).
- Additional culinary or hospitality management certifications will be highly regarded.
Experience:
- Minimum of two years’ full-time experience as a Chef in a commercial or wholesale kitchen.
- Demonstrated ability to prepare, season, and cook a wide range of dishes, with expertise in satay-style cuisine and high-volume production.
- Proven experience supervising and training kitchen staff.
- Strong background in menu planning, stock management, and quality control.
- Experience working to strict deadlines while maintaining consistency and high standards.
