Task & responsibilities

  • Design and develop innovative menus that strike a balance between classic restaurant fare and contemporary dishes, incorporating seasonal ingredients and locally sourced produce
  • Oversee and participate in the preparation and cooking of meals, ensuring high-quality presentation and flavor in every dish.
  • Monitor portion sizes and waste to control food costs.
  • Lead, train, and mentor the kitchen staff, fostering a positive and efficient work environment. Ensure all team members adhere to food safety standards and kitchen procedures.
  • Ensure consistency in food preparation and presentation by monitoring food quality, portion sizes, and cooking methods. Conduct regular checks to maintain the highest standards.
  • Enforce compliance with health and safety regulations, including food safety, hygiene, and sanitation standards, to ensure a safe and clean working environment.
  • Manage inventory of ingredients and kitchen supplies.
  • Order ingredients and supplies as needed, maintaining relationships with suppliers.
  • Control food costs by minimizing waste and optimizing the use of ingredients.
  • Collaborate with front-of-house staff to ensure customer satisfaction by accommodating special requests, managing dietary needs, and handling customer feedback professionally.
  • Work closely with the head chef to run kitchen operations smoothly and assist in setting and managing the kitchen budget.
  • Plan and execute special menus for events, functions, and catering services.
  • Ensure compliance with health and safety regulations, including proper food handling, storage, and sanitation practices.

Qualification & experience

  • Be qualified in hospitality with AQF associate degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2) or have minimum three years’ experience as a Chef in a Commercial Kitchen
  • Ideally, at least 1 year of full-time experience
  • Experience creating exciting menus

Skills

  • good working knowledge of WHS standards 
  • able to maintain a clean kitchen and use kitchen appliances and equipment safely 
  • enjoy working to high standards in a fast-paced environment 
  • highly organized with the ability to supervise and support the team in kitchen operations 
  • create and produce food items that fit with current offerings
