Task & responsibilities
Duties of the Chef:
- Conceptualise, plan, and cost diverse café menus and seasonal specials, ensuring dishes balance creativity, nutrition, and customer appeal.
- Direct and oversee the preparation and cooking of all dishes, employing advanced culinary methods to maintain superior flavour, texture, and presentation.
- Execute all menu items strictly from raw and fresh ingredients, without reliance on pre-prepared mixes, frozen bases, or processed shortcuts.
- Evaluate and refine recipes regularly, introducing innovations that align with evolving dining trends while upholding the café’s brand identity.
- Monitor each stage of food production, enforcing exacting quality standards and ensuring consistency across service periods.
- Strategically manage procurement by sourcing premium produce, inspecting deliveries, and negotiating with suppliers to achieve both cost efficiency and excellence in raw materials.
- Supervise, instruct, and mentor kitchen staff, imparting professional cooking techniques, enforcing discipline, and fostering a culture of precision and teamwork.
- Coordinate staff schedules and kitchen operations to optimise workflow, particularly during peak hours of service.
- Enforce rigorous compliance with occupational health and safety protocols and food hygiene regulations, instilling best practice standards across all levels of food handling.
- Analyse operational performance, including portion control, food cost ratios, and waste management, implementing continuous improvements to achieve both culinary and commercial objectives.
- Collaborate with management on menu strategy, kitchen innovations, and long-term operational growth, ensuring the café maintains a competitive edge in the local dining market.
Qualification & experience
Skills and Experience Required:
To be successful in this role, you will need:
- AQF Certificate IV in Commercial Cookery or higher qualification.
- At least two years of full-time, relevant experience as a Chef.
- Strong knowledge of a wide variety of cooking techniques, menu planning, and kitchen management.
- Proven ability to prepare and cook diverse dishes in a café/restaurant environment.
- Experience in training, supervising, and motivating kitchen staff.
- Excellent organisational and time-management skills under pressure.
- Demonstrated commitment to food safety and workplace health standards.
