Task & responsibilities

• Examine and select meat cuts to ensure top-quality, freshness, and suitable texture
• Cut, carve, portion, and shape meat according to customer instructions and preferences
• Operate meat-processing equipment including grinders, mixers, slicers, and tenderisers
• Wrap, label, and prepare meat products for sale or distribution, ensuring correct weights and presentation
• Uphold sanitation and hygiene standards across food preparation surfaces, tools, and storage areas
• Organize and maintain attractive displays of meat products in chillers and counters
• Assist customers by offering expert advice on meat selection and usage
• Prepare and manufacture smallgoods such as sausages, hams, and cured products in compliance with safety protocols (excluding outsourced processes)
• Support culinary planning efforts and occasionally collaborate on menu creation and pricing analysis
• Ensure compliance with HACCP, Work Health & Safety (WH&S), and Quality Assurance guidelines

Qualification & experience

• Certificate III in Meat Processing.
• 1 to 2 years of work experience in butchery or smallgoods production.
• Knowledge of food safety, hygiene regulations, and HACCP procedures.
• Ability to operate butchery equipment and machinery.
• Strong attention to detail and commitment to quality.
• Ability to work efficiently in a team-oriented environment.
