Chef de Partie – Vin Populi

Salary: $79,500 – $85,000 per annum + superannuation
Vin Populi is seeking an experienced Chef de Partie to join our kitchen team on a full-time basis at our restaurant in Fremantle’s West End.
At Vin Populi, we pride ourselves on serving high-quality Italian-inspired food, including house-made salumi and fresh pasta, alongside a carefully selected offering of martinis and vino.
As Chef de Partie, you will work closely with the Head Chef and Sous Chef and take responsibility for the preparation, cooking and presentation of dishes within your designated section. You will also assist with stock control, food safety, portion control and the day-to-day operation of the kitchen.
Duties & Responsibilities:
- Prepare, cook and present dishes to the restaurant’s required quality and presentation standards.
- Manage and organise your designated kitchen section during preparation and service.
- Assist the Head Chef and Sous Chef with menu development and provide suggestions regarding recipes, ingredients and cooking techniques.
- Maintain consistent food quality, presentation and portion standards.
- Minimise food wastage and maintain effective portion control.
- Monitor incoming deliveries to ensure appropriate quality and quantity.
- Communicate stock and purchasing requirements to senior kitchen staff.
- Ensure stock is appropriately stored, labelled and rotated.
- Assist with the training and supervision of junior kitchen staff where required.
- Maintain high standards of personal hygiene, food safety and workplace cleanliness.
- Ensure kitchen equipment and work areas are cleaned and maintained appropriately.
- Comply with all food safety, hygiene and workplace health and safety requirements.
Qualifications & Experience:
- Diploma or other relevant commercial cookery qualification (or at least 3 years of full-time experience in the role).
- At least 12 months of relevant experience in a similar Chef de Partie role.
- Strong knowledge of food preparation, cooking techniques and kitchen operations.
- Ability to work effectively in a busy service environment.
- Strong organisational and communication skills.
- Experience with Italian cuisine, fresh pasta and/or traditional food preparation techniques would be highly regarded.
