Position Summary

The cook is to work alongside the kitchen team to preserve and enhance venue reputation, under the management of the head chef. They must produce high quality, fresh meals from preparation to final presentation, accurately following the meal guidelines of the venue, all the while maintaining a safe and clean working environment.

Key Responsibilities

The cook is to prepare and present a variety of high-quality meals in a well-prepared workstation, with timely delivery. They must maintain food quality control with fresh ingredients prepared before service. Maintain a clean, safe work environment and the safe, orderly storage of stock and ingredients.

Duties and Tasks

  • Carry out operations from preparation including the selection of suitable quality produce, the washing, cutting, measuring and controlled heating of prepared ingredients using a variety of cooking processes.
  • Prepare, cook, and present dishes to a consistently high standard including understanding the correct seasoning and garnishing of the meals.
  • Maintain workflow within the kitchen, including monitoring cooking processes, including temperature control on the fryer, grill, oven & induction stove. Workflow also extends to following correct cooling procedures and the safe storage temperature of foods.
  • Maintain a clean, safe, and efficient kitchen environment for themselves and others.
  • Minimise waste through thorough labelling and stock rotation plus ensure efficient use of resources by using measured portion control.
  • Work as a team, with good communication. This may include guiding new trainee/apprentice kitchen staff, and managing the pass to the front of house waiting team.
  • Attend regular kitchen team meetings to discuss ideas, produce prices and give input to upcoming seasonal menu changes.
  • Ensure compliance with food safety standards and OH&S regulations.
  • Prepare and adjust menu items to meet requested dietary requirements and allergy concerns.
  • Maintain proper food handling, storage and equipment hygiene and sanitation practices.
  • Adhere to workplace safety procedures including maintenance and safe use of equipment. The workplace set-up requirements.

Qualifications

  • Food Safety Supervisor Certificate

Skills Required

  • Sound knowledge of food safety standards and kitchen operations
  • Ability to multitask and work under pressure in a fast-paced environment
  • Have a solid understanding of current legislation and OH&S standard
  • Knowledge of food management systems across all levels

Experience Required

  • Minimum of 2 years of kitchen experience as a cook, including at least 1 year in a role working under a Sous Chef or Head Chef.
  • Demonstrated experience in food preparation and presentation including grilling, baking and frying.
  • Proven ability to maintain, organised workflow within a busy kitchen team environment.
