Rolin Associates Pty Ltd t/a are currently seeking a skilled and experienced Chef to join our kitchen team on a full-time basis.
Key Duties and Responsibilities
The successful candidate will be responsible for:
- Planning and developing menu items in consultation with management, taking into consideration customer preferences, ingredient availability, portion sizes, food costs and the style of food offered by the restaurant.
- Preparing and cooking a variety of menu items, including burgers, grilled meats, chicken dishes, schnitzels, parmas, wraps, salads, sides, sauces and other restaurant specialties.
- Monitoring the quality of ingredients and finished dishes throughout all stages of preparation, cooking and presentation to ensure consistent standards.
- Estimating food requirements and assisting in controlling food and labour costs to support efficient kitchen operations.
- Ordering food supplies and ingredients and monitoring stock levels to ensure adequate supplies are available for daily service.
- Inspecting incoming ingredients and supplies to ensure freshness, quality and suitability before use.
- Working closely with management and front-of-house staff regarding menu items, customer requirements, food preparation issues and the smooth coordination of meal service.
- Demonstrating appropriate cooking techniques and providing guidance to kitchen staff on food preparation, cooking procedures, portioning and presentation.
- Maintaining consistency in recipes, portion sizes, cooking methods and presentation across all menu items.
- Preparing ingredients and organising workstations prior to service to ensure the kitchen can operate efficiently during busy periods.
- Supervising food preparation and cooking activities and coordinating kitchen workflow during service.
- Monitoring the operation and appropriate use of grills, fryers, ovens and other commercial kitchen equipment.
- Ensuring food is appropriately stored, refrigerated, frozen and preserved to maintain quality and minimise wastage.
- Maintaining appropriate stock rotation and food storage procedures and assisting with inventory management.
- Ensuring compliance with food safety, hygiene, sanitation and workplace health and safety requirements throughout the kitchen.
- Maintaining a clean, organised and hygienic kitchen environment, including food preparation areas, equipment and storage facilities.
- Assisting with the selection, induction and training of kitchen staff where required.
- Contributing ideas for new dishes, seasonal offerings and improvements to existing menu items while maintaining the restaurant's established style and quality standards.
Skills and Experience
To be considered for this position, applicants should have:
- Relevant commercial cookery qualifications, preferably an AQF Associate Degree, Advanced Diploma or Diploma, or an equivalent qualification.
- Alternatively, at least three years of relevant professional experience may substitute for the formal qualification.
- Relevant hands-on experience working as a Chef in a busy restaurant, café, grill or similar commercial kitchen environment.
- Strong knowledge of food preparation, cooking methods, grilling, frying, portion control and presentation.
- Experience preparing a variety of made-to-order meals and managing multiple orders during busy service periods.
- Good understanding of menu planning, food costing, stock control and ordering of kitchen supplies.
- Strong knowledge of food safety, hygiene and safe food-handling requirements.
- Ability to monitor food quality and maintain consistent preparation and presentation standards.
- Ability to guide and train junior kitchen staff and communicate effectively with management and front-of-house employees.
- Strong organisational and time-management skills, with the ability to work effectively under pressure.
- Ability to work independently as well as collaboratively within a kitchen team.
- Flexibility to work across a rotating roster, including weekends and public holidays as required.
