In this role, you will be responsible for preparing and cooking a variety of dishes,with a focus on Mediterranean cuisine including traditional and specialty dishes.
Main Duties & Responsibilities
- Prepare and cook a wide range of menu items with consistency and attention to detail
- Season and garnish dishes, and prepare gravies and sauces
- Cook meals according to individual dietary requirements
- Estimate weekly food requirements and implement cost-saving measures
- Decorate and present food platters and dishes using herbs, sauces, and garnishes
- Maintain consistent food quality and cooking standards
- Ensure all dishes meet quality, taste, and presentation standards before service
- Prepare ingredients by washing, chopping, slicing, and marinating.
- Minimise food waste and contribute to cost-control efforts
- Set up workstations with all necessary ingredients and cooking equipment
- Operate safely and efficiently kitchen equipment including ovens, grills, fryers, and stovetops
- Understand correct storage temperatures of kitchen, freezers, fridges and cool room to store raw, cooked, and long-life food items, including gravies and sauces
- Maintain proper food temperatures during storage and cooking
- Assist with regular stock rotation and monitor expiry dates to minimise waste
- Assist with menu planning and changes if required
- Train and mentor junior kitchen staff and new team members, as needed or based on operational requirements
- Adhere to strict hygiene and safety protocols, including proper allergen handling and delivering food from the kitchen to customers.

Qualifications & Experience
- Certificate III in Commercial Cookery (with at least two years of on-the-job training) or Certificate IV in Commercial Cookery; OR At least three years of full-time, relevant experience in lieu of formal qualifications
- Minimum of one year of full-time experience in a similar role is required
Remuneration
The successful applicant will receive an annual salary of $77, 500, plus superannuation.
