La Cafeteria Pty Ltd t/a Casa Brasil, located in Surfers Paradise, Gold Coast QLD, is seeking a qualified Chef to join our team on a full-time basis.

Casa Brasil is a busy Brazilian restaurant specialising in authentic Brazilian cuisine and charcoal-style cooking. The successful applicant will work within a fast-paced kitchen environment and contribute to maintaining high standards of food quality, presentation and customer service.

The position is full-time (38 hours per week) with an annual salary of $70,000.00 - $80,000.00 plus superannuation, depending on skills and experience.

Task & responsibilities

• Planning menus, keeping in mind budget and the availability of seasonal ingredients
• Estimating food costs, monitoring and recording food waste
• Monitoring stock levels and placing orders to replenish stock as necessary
• Preparing relevant ingredients and menu items and creating typical Brazilian dishes
• Monitoring the quality of dishes throughout all stages of preparation, cooking and presentation
• Cooking and serving dishes with a high attention to detail
• Advising on cooking procedures
• Explaining and enforcing Health and Safety Regulations and ensuring a high level of cleanliness is maintained within the kitchen and workplace
• Correctly handling and storing food
• Communicating information regarding food preparation with Management, kitchen and waiting staff
• Assisting with training other kitchen staff on existing and new procedures
• Coordinating kitchen staff and assisting as required
• Receiving feedback and making improvements where necessary
• Creating new recipes to keep the menu fresh and exciting

Qualification & experience

• Relevant Diploma qualification or equivalent
• Minimum 1 year of relevant work experience in the same or a similar role
• Ability to work a flexible roster including nights, weekends and public holidays
• Ability to work efficiently in a fast-paced environment
• Strong organisational and communication skills
• Positive attitude and ability to work within a team environment
• Knowledge of Brazilian cuisine and charcoal cooking techniques will be highly regarded
