Are you an experienced Chef with a passion for seafood and steaks? Whalers Restaurant, located in the heart of Exmouth Escape Resort, is looking for a dedicated and skilled chef to join our dynamic team!

About Us: Whalers Restaurant is renowned for serving the finest local seafood, steaks, and fresh produce, offering a relaxed and family-friendly dining experience. Situated in Exmouth, the gateway to the World Heritage-listed Ningaloo Reef, our location is a nature lover’s paradise with pristine beaches, turquoise waters, and incredible marine life.

Position: Chef de Partie

  • Type: Full Time
  • Salary: $75,000 to $85,000 annually + Superannuation
  • Hours: 40 hours per week, including weekends and evenings and occasional split shifts

Skills & Experience Required:

  • Minimum 2 years experience in a fast-paced kitchen
  • Certificate III in Hospitality & Commercial Cookery
  • Expertise in working with seafood, steaks, and other high-quality proteins
  • Proficiency in the sauté pan & grill section
  • Experience in high volume kitchens and functions
  • Excellent hygiene and food handling standards, adhering to HACCP and cleaning schedules
  • Strong stock control and ordering capabilities
  • A creative mindset with an understanding of current industry trends
  • Impeccable attention to detail
  • Ability to work independently and as part of a team
  • Reliable, hardworking, with a positive and professional approach
  • Fluent in English with excellent communication and self-management skills
  • Legal working rights in Australia
  • Commitment to a minimum 6-month term, with preference for long-term employment

Tasks & Responsibilities

  • Prepare and cook high-quality dishes in line with Whalers Restaurant standards
  • Manage daily operations of the grill and sauté section
  • Ensure consistency, quality, and presentation of all meals during service
  • Assist with menu development, specials, and seasonal dishes
  • Maintain high food safety, hygiene, and HACCP standards at all times
  • Follow kitchen cleaning schedules and maintain a clean workstation
  • Assist with stock control, ordering, stock rotation, and minimising wastage
  • Work efficiently during busy service periods and functions
  • Support and communicate effectively with the kitchen team and front of house staff
  • Ensure all prep work is completed to a high standard before service
  • Monitor portion control and food quality to maintain profitability
  • Assist with training junior kitchen staff when required
  • Contribute positively to a professional, fast-paced, and team-oriented environment
  • Maintain equipment and report any maintenance or safety issues
  • Be flexible to work weekends, evenings, and occasional split shifts
  • Uphold the reputation and standards of Whalers Restaurant at all times

Qualification & experience

  • Certificate III in Commercial Cookery or equivalent qualification
  • Minimum 2 years experience in a fast-paced commercial kitchen
  • Proven experience working with seafood, steaks, and premium proteins
  • Strong knowledge of grill and sauté sections
  • Experience in high-volume service and functions preferred
  • Sound understanding of food safety, hygiene, and HACCP procedures
  • Experience with stock control, ordering, and stock rotation
  • Ability to work efficiently under pressure in a busy kitchen environment
  • Excellent organisational skills and attention to detail
  • Strong communication and teamwork skills
  • Reliable, punctual, and professionally presented
  • Creative approach to food with knowledge of current hospitality trends
  • Ability to work independently and follow direction from senior chefs
  • Fluent English communication skills
  • Valid Australian working rights required
  • Availability to work evenings, weekends, and split shifts when required
