DAL MONDO RESTAURANT AND FUNCTION CENTRE is seeking a passionate and talented person to join our restaurant as a permanent full-time Chef.

We are offering an attractive salary of between $76,000 to $80,000 p/a plus super depending on experience and other factors to the successful applicant.

At Dal Mondo Restaurant and Function Centre, we pride ourselves on delivering an exceptional Italian dining experience from the heart of Traralgon, Victoria. As a family-run restaurant, we specialise in traditional Italian cuisine, wood-fired pizzas, and housemade pasta, serving the Gippsland community with warmth and authenticity. Beyond our restaurant, we host a wide range of private functions from birthdays and corporate events to weddings in our dedicated function spaces.

Task & responsibilities

As a Chef, your tasks include:

  • planning and developing Italian-inspired menus in consultation with management, estimating food and labour costs, and coordinating supply orders for fresh produce, pasta, seafood, and wood-fired pizza ingredients
  • monitoring and maintaining the quality and consistency of dishes at all stages of preparation and presentation, ensuring every plate meets Dal Mondo’s standards for flavour, portion size, and Italian authenticity
  • discussing food preparation requirements and service priorities with the Restaurant Manager, kitchen team, and wait staff, including accommodating dietary needs and allergen requests from guests
  • demonstrating Italian cooking techniques to kitchen staff, including housemade pasta preparation, wood-fired pizza cooking, and traditional sauce and risotto methods, and advising on presentation standards
  • preparing and cooking traditional Italian dishes including wood-fired pizzas, housemade gnocchi and pasta, seafood, veal, and a range of classic mains and entrees for both restaurant service and private functions
  • explaining and enforcing food safety, hygiene, and sanitation regulations throughout the kitchen, ensuring all staff comply with relevant Victorian food handling standards
  • assisting in the selection and training of kitchen staff, fostering a positive and skilled team environment to support Dal Mondo’s busy restaurant and function operations
  • managing the storage, preservation, and rotation of food stocks including chilling and freezing of housemade sauces, doughs, and fresh ingredients to minimise waste and maintain quality
  • preparing and cooking food for bespoke function menus, including weddings, corporate events, and private celebrations, in line with client briefs and Dal Mondo’s catering standards


Qualification & experience

Requirements:

•    Possesses the relevant qualifications

•    Proven experience as a Chef in a professional restaurant, hospitality, or function centre environment

•    Strong culinary skills with the ability to interpret recipes, assess preparation requirements, and consistently deliver high-quality dishes

•    Excellent communication skills with the ability to work collaboratively in a team, liaise with kitchen and front-of-house staff, and maintain clear communication during service

•    Knowledge of food safety standards, hygiene compliance requirements, and safe handling of kitchen equipment, tools, and ingredients
