About the Role:

This is a hands-on leadership role responsible for overseeing daily kitchen operations, maintaining high food quality standards, and ensuring efficient service during busy periods.

The successful candidate will demonstrate strong organisational skills, leadership capability, and the ability to perform under pressure in a fast-paced hospitality environment.

Key Responsibilities:

  • Prepare and develop menu items in line with the restaurant’s concept and standards
  • Estimate food consumption and organise preparation requirements
  • Manage and supervise all kitchen operations and staff
  • Delegate and oversee ingredient preparation (chopping, peeling, portioning, marinating, etc.
  • Monitor food preparation and cooking to ensure quality, consistency and portion control
  • Maintain high presentation standards before service
  • Ensure freshness and quality of ingredients
  • Monitor stock levels and coordinate ordering requirements
  • Maintain accurate records of stock, wastage and implement cost-control strategies
  • Ensure compliance with Australian food safety and storage regulations
  • Maintain a clean, sanitised and organised kitchen environment
  • Conduct staff training and provide ongoing leadership and mentoring
  • Oversee opening and closing kitchen procedures
  • Adapt dishes to accommodate allergies and dietary requirements

Skills & Experience Required

  • Certificate IV in Commercial Cookery (or equivalent qualification)
  • Minimum 1 year of relevant work experience
  • Strong leadership and team management skills
  • Sound knowledge of food safety standards and regulatory compliance
  • Excellent time management and organisational skills
  • Ability to work efficiently in a high-volume environment
  • Strong attention to detail and presentation
