About the Role

This is a full-time position suited to someone who is passionate about Asian cuisine, organised under pressure, and experienced in commercial kitchen operations.

The successful candidate will be responsible for:

• Planning and assisting with the development of menus featuring Two Hands’ specialty handmade

Sarawak-style noodles, rice dishes, stir-fry meals, and other Malaysian-Chinese cuisine offerings.

• Estimating food and labour costs, monitoring stock levels, and ordering food supplies to support

efficient kitchen operations.

• Preparing and cooking dishes daily in accordance with established recipes and presentation

standards to maintain the authentic flavour profiles and consistency of Foochow and Hokkien

cuisine.

• Ensuring handmade noodles are cooked to the required texture and quality by regulating cooking

times, temperatures, and preparation techniques.

• Monitoring the quality of dishes at all stages of preparation, cooking, and presentation to ensure

consistency, freshness, and customer satisfaction.

• Using woks, cooking chopsticks, skimmers, and other commercial kitchen equipment efficiently to

prepare stir-fried dishes and specialty noodle meals.

• Demonstrating cooking techniques and advising kitchen staff on food preparation procedures,

portioning, plating, and kitchen workflow.

• Discussing food preparation issues and coordinating daily service requirements with management

and front-of-house staff.

• Checking ingredients and kitchen supplies daily to ensure freshness, quality, and availability for

menu operations.

• Organising, storing, freezing, and preserving food items appropriately in accordance with food

safety and hygiene regulations.

• Explaining and enforcing hygiene, sanitation, and workplace health and safety procedures within

the kitchen.

• Assisting with the supervision and training of kitchen staff, including junior chefs, cooks, and kitchen

hands.

• Coordinating food preparation timing and kitchen workflow to maintain efficient service during busy

trading periods.

• Maintaining a clean, organised, and professional kitchen environment at all times.

Skills & Experience

  • More than 2years of experience as a Chef in a busy commercial kitchen
  • Experience with Malaysian, Chinese, or Asian cuisine preferred
  • Strong wok cooking and noodle preparation skills
  • Ability to work efficiently in a fast-paced environment
  • Good communication and teamwork skills
  • Understanding of food safety and kitchen hygiene standards
  • Reliable, organised, and passionate about cooking
