The successful candidate will take the lead on our savoury kitchen and café menu — preparing breakfast, lunch and all-day dining offerings — while working alongside our bakery and pastry team to deliver a consistently excellent customer experience.

Task & responsibilities

• Prepare and produce a wide range of café-style savoury dishes, including breakfast, lunch, and all-day dining menu items, to a consistently high standard.
• Manage daily kitchen operations, including mise en place, cooking, plating, and service across a busy café kitchen.
• Follow established recipes, techniques, and production schedules while maintaining quality, presentation, and consistency.
• Ensure compliance with food safety, hygiene, and HACCP requirements within all areas of kitchen production.
• Monitor stock levels and assist with ordering fresh produce, proteins, and other kitchen supplies.
• Assist in training and mentoring junior kitchen team members while fostering a positive, collaborative environment.
• Work closely with the bakery and pastry team to ensure a seamless café offering across sweet and savoury menu items.
• Contribute to seasonal menu development and the creation of innovative café dishes aligned with THE PIALLIGO BAKESMITH brand.

Qualification & experience

• Minimum 2 years of full-time experience as a Chef, Cook, or similar role within a commercial kitchen, café, or restaurant environment.
• Relevant Certificate III or higher qualification in Commercial Cookery, or equivalent industry experience.
• Strong knowledge of café-style cooking, including breakfast and lunch service, grill and stovetop work, and menu execution.
• Ability to work efficiently in a fast-paced, high-volume kitchen environment while maintaining exceptional attention to detail.
• Flexibility to work early mornings, weekends, and public holidays as required by trading demands.
• Strong commitment to food safety, cleanliness, and HACCP compliance standards.
• Positive attitude, strong communication skills, and the ability to work collaboratively within a passionate kitchen and café team.
